Since the 13th of december a new law has come in place to require labeling of the 14 most common allergies. When I first read this I was a little overwhelmed, because that would mean I’d have to start noting all the ingredients with my food, and taking care that there is no cross-contamination between these products. And even though I already try to use as little as possible of these ingredients, noting them just does take work.
Now I’ve been thinking more about this new ‘rule’ and it seems to give great opportunities, this will support restaurants to use less of these ‘allergy’ sensitive products and not use them in all meals. This is mostly the case for wheat or milk which people like to use as thickener, to make it more creamy, to stabilize something, and countless other uses. In my experience as a organic and vegetarian caterer I meet a lot of people who have an intolerance for these products so I automatically avoid them already by using replacement like buckwheat, rice milk, gluten free oats or almond milk. I personally already preferred to eat no wheat and no milk as it can give me quite a stomachache.
After a little bit of browsing around I got the idea to use icons, now most of these icons I seem to find quite dull, so I started to create my own set of flat icons. I’m adding goats and sheep dairy to the list as well, as I’m a vegetarian caterer where the difference between cow, goat and sheep dairy sometimes really matters. The reason for this is that some people have an intolerance for cow’s dairy, but not for sheep or goats dairy.
As an addition to making these on the computer to use them on my website, I got the idea to add these with simple stickers to all of my meals. And I might even transform them into little magnets I can reuse and stick them on tiny metal chalkboards, where I also have a description of the meal.

Nieuwe voedsel allergenen wet
